Strawberry & Passion Fruit Jam

Makes: 500 gram

When the strawberries are in season and they have this bright red color inside and are extra sweet I love making this simple strawberry passion fruit jam.

It is so easy to make and not sweet, it is 100 % pure and fresh strawberries flavor and the passion fruit makes it so special in flavor and makes it naturally thick. I also add a little fresh lemon juice both for flavor and so that the fresh strawberries don't burn in the bottom of the pan.

This jam is perfect on waffles, bread, or combine it with some whipped cream and you have a lovely summer dessert.

The best season to make this is when the strawberries are in season and they have this bright red color, they taste so much better, that said read my *note below if you are using frozen strawberries.

→For this recipe I used strawberries that are in season during the summer,  that's why you get such a beautiful bright red color and they are extra sweet, You can however use frozen strawberries as these are often frozen at the peak of the season on the farm, and may actually taste better than using fresh strawberries that are in the store when it´s not berry season. If you are using frozen strawberries the strawberry &passion fruit jam is a bit runny when you made it, but will firm up a bit more after it has been in the refrigerator.

Strawberry & Passion Fruit Jam
 

  • 500 gram fresh strawberries or frozen *Note
  • 3 passion fruits, both the pulp/seeds 
  • 2  tablespoons white sugar
  • juice from 1/2 up to 1 lemon, preferably organic lemon
  • 2 tablespoon corn starch

Strawberry passion fruit Jam
 

  • Place 500-gram strawberries, juice from 1/2 or 1 lemon, 2 tablespoons white sugar, two tablespoons corn starch, and the inside of 3 passion fruits in a medium-size pan. 
     
  • With a wooden spoon combine the strawberry & Passion fruit mixture and place the saucepan over medium heat and heat the mixture for about 5 -7 minutes or until the strawberries are soft and juicy. Stir at times so the strawberry mixture doesn't stick to the bottom of the pan.
     
  • Pour the hot jam into sterilized glass jars or in an airtight container.
     
  • Seal the glass jars tightly, when they are cooled,  store the jam in the refrigerator for up to one week.
     
  • Because of the little amount of sugar in this jam, For maximum freshness and deliciousness, serve
    within a week.
