Dreamy Strawberry Frosting

Makes: frost a two-layer 8-inch/20 cm cake

This dreamy strawberry frosting has a super-light texture and a lovely natural flavor. You´ll want to dive right in with a spoon.

This pink cloud-like meringue-based frosting is made with juice from Roasted strawberries. It gives a fresh and natural strawberry flavor to the frosting and is whipped into an all-natural pink cloud.

This strawberry frosting is so delicious, and it gets the most beautiful glossy shine and will look beautiful when swirled onto your cupcakes.

Try using Ruby red strawberries for the most delicious strawberry flavor, and the beautiful red color from the ruby red strawberries will tint the frosting natural pink.

 

Before You Start
 

Read the recipe completely, make sure you have everything you need, and try using ripe/dark strawberries for the best strawberry flavor.

Bakers Tip
 

Glucose syrup or light corn syrup is an inverted sugar that adds shine and stability to the frosting. You can find it at the grocery store or online! 

Cream of tartar stabilizes the egg whites to help them stiffen, resulting in a pillowy strawberry frosting.

Roasted strawberry 
 

  • 300 gram fresh strawberries
  • 1 tablespoon sugar or more to taste ( optional)

 

Dreamy Strawberry Frosting
 

  • 100 gram egg whites (about 3 eggs) at room temp
  • 255  gram superfine sugar or white sugar
  • 75 gram roasted strawberry juice, at room temp
  • 65 gram glucose syrup or light corn syrup 
  • A pinch of cream of tartar *note
  • 1 teaspoon vanilla bean paste, optional

This frosting recipe is made with juice from roasted strawberries for the best strawberry flavor. Try using ruby red strawberries that are in their prime during the summer months, they have an extreme sweetness, and you get the most beautiful and intense strawberry, roasted strawberries with a gorgeous ruby red color.

 

Roasted Strawberries

 

  • Preheat the oven to 190C°/375F°.
     
  • Remove the leafy caps from the strawberry and halve the strawberries; place 300 grams of strawberries into a 25 x 30 cm ( 10 x 12 inch) baking dish; make sure the height of the baking dish is at least 5 cm ( 2 inches) as the strawberry syrup will bubble while it is in the oven.
     
  • Place the hulled/halved strawberries on a baking dish and sprinkle 1 tablespoon of sugar on top of the strawberries.
     
  • Bake the strawberries in the center of the oven for 30 to 35 minutes, stirring every 10 minutes to prevent the strawberry juice from burning. The strawberries should be soft but still have some give.
     
  • Remove from the oven; strain the roasted strawberries through a fine-mesh sieve. You need only the roasted strawberry juice for this recipe, and enjoy the strawberries as strawberry jam inside your cakes, cupcakes, or on waffles.

 

Dreamy Strawberry frosting 

 

  • Combine 255-gram white sugar or superfine sugar, 100-gram egg whites, 60-gram glucose ( or light corn syrup), a pinch of cream of tartar, and 75 grams of roasted strawberry juice in the bowl of a stand mixer.
     
  • Place the bowl over steamy water, stirring and constantly scraping with a whisk or spatula until thin and looks like strawberry milk, and most importantly, all of the sugar is 100 % dissolved. If you have a digital thermometer, it should read 60°C/ 140°F; at this stage, it is also safe to consume.
     
  •  With gently simmering water, the meringue should cook fairly fast; this step takes about 3 to 5 minutes. If you find the temperature climbing too slowly, simply crank up the heat.
     
  • Rub some egg white /sugar mixtures between your (grease-free) thumb and forefinger to check if the sugar is dissolved. If it does not feel grainy anymore, your sugar is dissolved.
     
  • Transfer the mixture to a stand mixer fitted with the whisk attachment. Whip on medium-high speed until glossy, thick, and tripled in volume or until you are satisfied with the consistency. About 5 minutes. Make sure that the frosting isn´t warm when you pipe it onto cupcakes or decorate your cakes. Otherwise, it won't hold its shape.
     
  • This roasted strawberry meringue frosting is best used right away but keeps well on cupcakes or cakes at room temperature for at least 2 days.
     
  • Keep leftovers covered at room temp. You can always re-whip the frosting on high speed just before piping it onto your cupcakes.
     
  • This frosting is a perfect match with a chocolate cupcake or a vanilla cupcake.
     
  • This dreamy Strawberry frosting is best used right away but keeps well on cupcakes or cakes at room temperature for at least 2 days.
     
  • Keep leftovers covered at room temp. You can always re-whip just before piping onto your cupcakes.
     

Another option
 

  • If you want to have a strawberry dream frosting that is extra glossy, there is another way you can do that, by using a hand mixer, a deep bowl, and a saucepan this way the frosting is even more glossy.
     
  • To do it this way; place Combine 255-gram white sugar or superfine sugar, 100-gram egg whites, 60-gram glucose ( or light corn syrup), a pinch of cream of tartar, and 75 grams of roasted strawberry juice in a deep medium bowl that fits into your saucepan.
     
  • Just simply boil the water in your saucepan, then turn off the stove, and place the deep bowl inside the warm simmering water, immediately mix on low speed (mix at al times or you may end up with scrambled egg whites) until the sugar is completely dissolved, then continue mixing at medium speed while you still have the bowl in the saucepan until soft peaks form. Remove the bowl from the simmering water and continue mixing on medium speed until the mixture is completely cool, thick, and glossy.
     
  • When you do it this way, you get a very beautiful shine on your strawberry dream frosting, and it looks glossy and beautiful on your cakes or cupcakes. See the step-by-step photos.
