Almond Paste

Makes: 450 gram

Almond paste is super easy to make and so incredibly delicious. 

Almond paste is made from whole raw almonds, powdered sugar, vanilla bean paste, and water. When you combine all these ingredients in a food processor, you get an almond paste.

Almond Paste can be used to make cookies or use it as a filling in sweet rolls like my Swedish Cinnamon rolls or in cakes.

*Note

I use almond paste in my Swedish kanelbulle ( search on my app for Swedish Cinnamon rolls-kanelbulle)
You can also roll the almond paste into small rounds and dip them into melted chocolate, perfect for the holiday season.
 

Cookies: make almond cookies by rolling the dough as shown in the picture above, and then slice 1 cm thick almond paste slices.
Place the dough on a baking sheet covered with parchment paper and bake it at 210/410 for about 5-10 minutes. ( these cookies are best slightly underbaked)

  • 250 gram  whole raw almonds 
  • 200 gram  confectionary sugar
  • 1 teaspoon vanilla bean paste
  • 50 ml of water
  • 100 gram confectionary sugar to dust/roll

Directions for the almond paste

 

  • Place whole raw almonds in a food processor and process until finely ground.
     
  • Add the confectioners’ sugar, vanilla bean paste, pulse, and add water a little at a time. Pulse until the dough comes together.
     
  • Dust your work surface with confectioners’ sugar, take the almond paste out of the food processor, dust it with icing sugar, and knead it.
     
  • For maximum freshness and deliciousness, use immediately.
     
  • Wrap in plastic wrap; It will keep for up to 2-3 weeks in your refrigerator, wrapped in plastic wrap.
